Who loves popsicles? Well, I know we sure do!

We love to make them at home because we can make what we want and change up the flavors anytime we want. Plus I can severely limit how much sugar I include. It’s a great way to have a refreshing treat while still watching what I’m eating.

I had the chance to try these Ice Pop Molds and we went straight to the kitchen and whipped up some popsicles. (these are some of the cheapest popsicle molds, we’ve had them about 6 years now and they look great, are dishwasher safe and at the time of posting are only $5.99)

It took mere seconds to whip these up because we honestly know how much we love them anyway.

We’ve made them before and they kinda happened on accident the first time.

But then we kept making them and changing them up and this is our final delicious ice pop.

I find myself drawn to popsicle molds that have wooden sticks, however this set is similar to another one I have that I really like.

So I was open to trying it out. I was super happy with the results.

After a quick dip in some water, the popsicles released smoothly.

They were very easy to clean out and I was able to wash them in the dishwasher on the top rack.

This set includes an ice pop mold that makes six popsicles and two push-pop style molds as a bonus.

We pureed some fruit and allowed our small fry (5 1/2 months old) to cool off on a hot day with those.

He loved them and he was impressively able to hold them by himself, allowing him to decide when he wanted a taste or not.

Plus they are silicone so they aren’t super cold on the outside and we were able to simply cap them and pop it back in the freezer for later.

The popsicle “stick” part of the mold is made of plastic, so it’s 100% reusable which is nice, because it means I just wash and reuse.

No panic when I am out of sticks.

The only problem I have with this ice pop mold is that it’s not made of a thick plastic, but rather a bendable (slightly) plastic.

So when your popsicle molds are full, you have to be VERY careful carrying them.

I fill my molds to the top, so I had some spillage when trying to move the molds.

Also when you push the stick on and try to secure the lid, it bends down in the middle a little. It’s workable you just have to be careful.

How to Store Your Strawberry Coconut Popsicles

Properly storing homemade popsicles is key to keeping them fresh and delicious! Here’s how:

1. Freeze them solid: Make sure your popsicles are completely frozen in their molds before you try to store them.

2. Wrap them up: Once frozen, gently remove the popsicles from the molds. Wrap each one individually in plastic wrap or wax paper. This helps prevent freezer burn.

3. Bag them: Place all the wrapped popsicles in a large, airtight freezer bag. Squeeze out as much air as possible before sealing the bag. This extra layer of protection keeps them from drying out.

4. Keep them cold: Store the bag of popsicles in the back of your freezer where the temperature is most consistent. Avoid opening the freezer door too often to help maintain the temperature.

Extra Tips:

  • Label the bag: Write the date on the bag so you know how long they’ve been stored.  
  • Don’t overfill the molds: Leave a little space at the top of each mold to allow for expansion as the liquid freezes.

Quick Tip for Popsicle Release

If you want to release the ice pops easily, submerge almost to the top (not completely) in lukewarm water for about 1-2 minutes and then slowly slide popsicle out. Enjoy these Strawberry Coconut Ice Pops!

Strawberry Coconut Popsicles

Ingredients
  

  • 11 ounces coconut milk
  • 2 cups strawberries pureed
  • sweetener if desired

Instructions
 

  • In a blender, puree the fresh strawberries. Check for sweetness. I found that fresh strawberries often have a sweeter flavor already. If you use frozen strawberries you will more than likely need to add some sweetener. Simply add whatever you like, to taste.
  • Taste the coconut milk. If you desire some sweetener, simply add whatever you like, to taste.
  • Fill each popsicle mold to about 2/3 full of the coconut milk.
  • Slowly pour in the pureed strawberry until almost to the top. Use a knife to swirl the strawberry all through the popsicle. The coconut milk is thick so you really need to push that strawberry down if you want it throughout the ice pop.
  • Freeze for 4-6 hours. Enjoy!
